Under the direction of the young chefJawad Rahali, it clearly displays a gastronomic ambition. The exceptional gardens of Dar al Hossun, which one comes to admire from afar, constitute an absolutely enchanting setting, unlike any other. By day and even more by night.

Today, I will not tell you about the gardens of Dar Al Hossoun that amateurs come to admire from all over the world. Nor will I describe the rooms and suites of the estate where charm competes with elegance; not a word either about the simple and warm welcome that this renowned place offers you, like the owner of the place, Florence, who continues to maintain the magic of this very special space, imagined and created by her brother Ollivier who died too soon. No, today the restaurant is the star.


Indeed, since last December, an original catering concept has been set up here with the arrival of a new chef, Jawad Rahali, 31, a disciple of Escoffier, who has behind him a fine reputation and a rather atypical career.


in 2009 the Institute of hotels and restaurants in Marrakech. "I learned my job by doing internships in Casablanca and Rabat, he says, especially in collective catering in tourist hotels offering international cuisine. But I knew that my ambition was to become a full-fledged chef”. But for that, he needed a diploma - which he obtained - and the knowledge he acquired in the various positions he held.


“I had the chance to do, among other things, an internship at the Domaine Villate Limoun in Oulad Teima with chef Lahcen Hafid, who was responsible for the kitchens of the Ritz in Paris. It was he who opened the way to gastronomy for me. at the Fairmont Taghazout Bay, near Agadir. “This is where I perhaps learned the most things with the great chef of Japanese gastronomy Masaharu Morimoto with whom I became familiar with this amazing cuisine! ".

On the strength of these experiences and with the desire to be the only master on board in his kitchen, he decided last year to respond to an advertisement posted on the Disciples d'Escoffier website, that of the management of Dar Al Hossoun, who wanted to offer its customers top-of-the-range international cuisine. The interview is going well and everything will then go very quickly: at the end of November 2021, there he is, then, chef of the gourmet restaurant “Les Jardins de Taroudant” where he will apply his recipe.


“I like to mix things up, which is probably due to my approach to Asian cuisine, which is above all a mixture of tastes, salty-sweet, sweet-acid. Not to mention that famous fifth flavor, umami, which in Japanese combines delicious (umai) and taste (mi) and is often described as the meaty and salty delight that deepens the flavor… but in fact it is difficult to describe! ". To appreciate, you have to taste… one of the many dishes offered in the new spring menu of the Jardins de Taroudant, which is a mix of Italian, Moroccan, French and Japanese cuisine, “my personal cuisine, a cuisine that will grow with me! Enthuses Jawad, who also specifies that he only works with noble, fresh products, whether meat or fish and vegetables of course.

And to assist him in his culinary mission, a brigade made up of a cook, Karima and three boys, Ibrahim, Youssef and Abdelaziz and the young diver, Achraf. "Today, after organizing my team, I can even delegate part of the work." Which leaves him some time for his new passion. “This is the first time here in Dar Al Hossoun that I have tried pastry and for that I had to take advice from different chefs, and work a lot of course”. Her first dessert? A galette des rois not very successful! “She was made of concrete! he said. But after several tries, he managed the best frangipane pancakes. And more desserts followed! As we can see, Jawad loves a challenge!

3 questions to Xavier Giraud, CEO

1) What is the genesis of this new restaurant?

There was not really an offer on Taroudant of high-end international cuisine, gourmet, to satisfy a local clientele and the surrounding area, which does exist and which had to go until now to Agadir. For three years now, with Ollivier Verra, we have been thinking about designing a new kitchen, enlarged, more functional and professional, likely to accompany our project. With from the start, the search for a chef at the height of the establishment.

2) A challenge for Dar Al Hossoun

The Covid crisis has slowed us down a lot, not to mention the dramatic death of Ollivier. With his sister Florence, we therefore took over this project which was so important to us and the fitting-out work was finally completed at the end of 2021. Jawad Rahali was recruited this fall. His proposals and our vision of a menu that resembles us were quickly agreed and this is how we were able to offer the winter menu at the inauguration of the restaurant on December 18th. It is voluntarily a card with a limited choice since we only work with fresh products and it will be renewed each season. We started the spring menu on April 2. Let's not forget our wine list, which is only Moroccan and which we of course want to maintain at a very high level of quality.
